If he did seek out the children of the forest then why did they restrain him and he also looked horrified when and while it happened so I don't believe he was doing it willingly

I love this theory. However judging by the way this season is going I'd say throw away all these theories. The show is simplifying itself to a good vs evil type deal. Night King is evil, the living are good. They will fight and that will be all. The books however are probably a lot more complicated than the show.

I really hope you're right in some regards, in that the Night King has some more complex motivation than just 'destroy the world and make everyone undead', because that would go against most of what Game of Thrones have set to be apart from other fantasy universes.

The only other characters we know to have dragonglass stuck in their chest by the CotF is Benjen, who isn't a Walker. just an extra point

Light Bringer most likely nods to the fact the light bringer will bring light aka daylight and end the long night. I believe Dawn is Lightbringer.
